A legend from the UK, Chef Ashley Palmer-Watts has been with Heston Blumenthal since the early days, joining The Fat Duck in 1999. He was promoted to sous chef in 2001 and head chef two years after that. He now heads Dinner by Heston in London which opened in late 2010. The restaurant, and now one in Melbourne craft an historically-based menu with such dishes as Meat Fruit, in which cooked meat is made to appear as a mandarin orange. Many of the restaurant’s other dishes have their origins in the 13th to 18th centuries of British cuisine.
