Chef Federico and partner Somi opened Bottarga in Martin Street, Brighton just under a year ago. Fortunately they have weathered all sorts of challenges, not the least Covid and all it had to offer. Initially they ran Bottarga as a café during the day and Italian restaurant by night however their focus is now on fine dining, opening for lunch and dinner service only. They have changed the decor giving the restaurant a more refined and warm feel, the menu has been expanded with Japanese flavours intertwined with traditional Italian fare and the kitchen completely re-vamped. The food, flavours and presentation are excellent as is their extensive and impressive wine list.
