Back in 1915 the site housed a State Bank and, as time progressed, a pub, nightclub and Asian Restaurant. Maintaining the heritage-listed façade, Saint Hotel has been transformed into a stylish multi-level venue with five distinct spaces although currently only three in operation .. Saint Dining, Saint Bar and Bar 54. We ate in the fine dining, without being pretentious, area … the kitchen headed by executive chef and business partner, Gary Lai ex-Atlantic. Our flavoursome dishes were elegantly presented and our steak cooked on the Josper, served with red wine jus, was next level melt in your mouth!
