Tetsuya’s – The End of an Era in Sydney Dining

After 35 extraordinary years, Tetsuya’s has closed its doors. Led by Tetsuya Wakuda, the restaurant redefined what fine dining could be in Australia. His fusion of Japanese precision and French technique created a style uniquely his own .. refined, balanced, and deeply thoughtful. The Confit Ocean Trout, arguably one of the most photographed and celebrated dishes in the world, became a symbol of this perfectionism and restraint.

Tetsuya’s was never just a place to eat. The Kent Street dining room, with its serene garden views and quiet elegance, offered something closer to theatre ..  a complete sensory experience. Every course told a story of craftsmanship and respect for ingredients.

Many of today’s leading chefs passed through Tetsuya’s kitchen, carrying forward his philosophy of precision, patience, and humility. The restaurant helped place Sydney firmly on the global culinary map, showing the world that Australian dining could rival the best in Paris or Tokyo.

The closure came as a result of redevelopment plans and an unrealised relocation. Though practical circumstances ended its run, the legacy Tetsuya’s leaves behind is untouchable. For decades, it was a place where countless diners celebrated milestones, tasted something unforgettable, and experienced genuine culinary artistry.

Tetsuya’s wasn’t just about food — it was about grace, detail, and timeless excellence. Its closing marks the end of an era, but the spirit of what Tetsuya Wakuda built will continue to influence Australian dining for generations to come.
